My Story

So, I cannot cook the conventional way to save my life.  I don’t enjoy cooking and most of what I cooked was not even edible. We ate a lot of take out and pizza.  When my son was 13 he decided he wanted to learn to cook so that he would at least have something to eat.  Trust me – he never went hungry.  Anyway, I started reading about the Instant Pot online and I found bunches of recipes on YouTube where they actually talk you through the prep.  I thought to myself – Hey, I can do that and bought me a Pot. 

My first pot was an 8qt Ultra and that was a really good decision. It was easy to use and my first go at it was of course the water test.  I survived.  The second was Hard Boiled Eggs.  I used the 6-6-6 method and they were perfect.  The 6-6-6 method is 6 minutes cooking on high pressure, 6 minutes natural release (NR from now on) and 6 minutes in an ice bath. They are so easy to peel – the egg literally pops out of the shell and they taste good too.  No stinky sulfur smell!! 

My next foray at perfection was Redemption Pot Roast. Why “Redemption” you wonder …. well when I was about 7 or 8 my Granny was cooking a pot roast and all the fixins in an old fashioned pressure cooker. She told me in no uncertain terms:

“DO NOT TOUCH THE JIGGLY THING”

Well, not only did I touch it I HELD it down. The results of this consisted of a spectacular BOOM that made everyone come running. The pot roast and all the fixins were hanging off the ceiling in three rooms. Their first concern was to make sure I was ok – and I was. Not really sure how but the mess missed me completely – and their second concern was to open up a can of whoop hiney on me. Well deserved – I might add.

So, the Instant Pot Pot Roast was a redemption of the meal that I blew all over the house once upon a time and it came out amazing. The meat was tender and juicy and the veggies were perfect.
