Banana Peanut Butter Cup Muffins

So, I had some bananas that were not ripe at all – they were the greenest banana I had ever seen and I was so looking forward to them being ripe in a day or two. That is not what happened though.

The next day they were still GREEN and then the third day they were BROWN! Really, really brown. However, with the state of things and the pandemic business there was no way was going to waste these bananas. So, I decided that Banana Chocolate Chip Muffins were in order.

I started collecting ingredients and as I got to the chocolate chips I realized that I didn’t have any … but I did have these little tiny peanut butter cups! They are about the size of a toll house chip … maybe a bit bigger. See photos for size reference! So, I threw a cup of those in and 2 tbsp of peanut butter.

Banana Peanut Butter Cup Muffins

Nutrition per portion

Ingredients
  • 1 1/2 cups All-Purpose Flour
  • 2/3 cup of Sugar
  • 1 tsp Baking Soda
  • 1/2 tsp ground cinnamon (or to taste)
  • 1/8 tsp Salt
  • 1 Large Egg (if I have medium eggs I use 2)
  • 1 1/3 cups of Ripe (really ripe) Bananas (About 3 medium)
  • 1/3 cup Melted Butter
  • 1 tsp Vanilla Extract
  • 1 cup Mini Peanut Butter Cups
  • Sparkling Sugar (to sprinkle on top)
Method
1. Mash Bananas:
2. Mix your dry ingredients in a large bowl:
  • AP Flour
  • Sugar
  • Bakin Soda
  • Cinnamon
  • Salt
3. Mix wet ingredients:
  • Egg
  • Mashed Bananas
  • Melted Butter
  • Vanilla Extract
  • Peanut Butter
4. Add wet ingredients to dry ingredients
5. Whisk until well blended.
6. Fold in Mini Peanut Butter Cups
7. Sprinkle Sparkling Sugar on top of each muffin.
8. Set your Vortex to Air Fry to 320 degrees for 12 minutes.
9. Spoon into Silicone Air Fryer Cup Cake Molds (Fill about 2/3)
10. Wait till Vortex says “Add Food” and them put muffins in.
