Parmesan Zucchini Zoodles

My first go in the Vortex was a simple Garlic Parmesan Cheesy Bread.  It came out perfect – I watched it like a hawk because I was not at all sure of the time or temperature I should be employing.  I used the Broil function which only works at 400 degrees  for 1 minute.  Delicious – (Sadly no pics) 

My second go at it was some Parmesan Zucchini Zoodles.  Now these were AMAZING … I mean some seriously delicious grub …

Parmesan Zucchini Zoodles

Easy to make crunchy and delicious addition to any meal!

Nutrition per portion

Ingredients
  • 1 lb zucchini (about 2) Zoodled
  • 1 cup AP Flour (for dredging)
  • 3 eggs (lightly beaten for dredging)
  • 1 cup Breadcrumbs (for dredging)
  • 2 tsps Italian Seasoning
  • 1 tsp Oregano (optional)
  • 2 ounces Parmesan Cheese grated (or the cheese of your choice)
Method
  1. Make Zoodles out of your Zucchini
  2. Mix Breadcrumbs, Italian Seasoning, Oregano and Parmesan Cheese.
  3. Lightly Beat Eggs
  4. Dredge a few Zoodles at a time in the flour.
  5. Shake off excess flour.
  6. Dip in the Eggs (Shake off excess)
  7. Coat with the breadcrumbs. (Shake off excess)
  8. Then onto the Vortex tray in a single layer.  (don't pile them on top of each other)
  9. Keep doing this till all the Zoodles are coated and on the tray. (I had to do two batches)
  10. Select the Air Fry function at 400 and take the time down to 4 minutes.
  11. It will tell you to switch the trays at some point so you get an even cook - do it.
  12. Cover the door with foil before you take the tray out as crumbs will fall through the tray.

    I love the descriptions of your evolution with the Instapots! Your descriptions give me confidence to begin with my pot that is still in the box due to my being a bit intimidated by a new way to cook. However your recipes, the pictures of the meals, and the descriptions are giving me both appetite and courage! Thank you!
