The Journey Begins

So, I cannot cook the conventional way to save my life.  I don’t enjoy cooking it and most of what I cooked was not even edible. We ate a lot of take out and pizza.  When my son was 13 he decided he wanted to learn to cook so that he would at least have something to eat.  Trust me – he never went hungry.  Anyway, I started reading about the Instant Pot online and I found bunches of recipes on YouTube where they actually talk you through the prep.  I thought to myself – Hey, I can do that and bought me a Pot. 

My first IP, an 8 qt Ultra, was delivered (thank you Amazon) 2 days ago. I has so much fun unboxing my new toy and figuring out what all the pieces were and what you use them for. I wanted to make sure I got this right so I followed the directions given. I did the water test. Super simple and that is just to see if your IP comes to pressure. I put 2 cups of water in the IP liner, locked the lid in place once I figured out how to get in on and I did high pressure for 2 minutes. It came to pressure and was so excited. YAY … I did it.

My second experiment before my Redemption Pot Roast was Hard Boiled Eggs. I used the trivet that came with the IP. I put in 1 1/2 cups of water and set the pot to high pressure for 6 minutes. When those 6 minutes were up I let it count up (or Natural Release (NR)) for another 6 minutes. At this point I did a Quick Release (QR) by pushing the button to release the pressure (on the IP Duo and Duo Plus you twist the release) and the eggs went into an ice bath for 6 minutes. They were perfect and they peel so easy it’s amazing. I’ll never make hard boiled eggs any other way.
